  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Optional: dried thyme smoked paprika, cayenne, or lemon zest

Method
 

Step 1. Prep the Drumsticks
  1. Remove drumsticks from the refrigerator 20 minutes before cooking. Pat them completely dry with paper towels.
Step 2. Season Thoroughly
  1. Place drumsticks in a large bowl. Drizzle with olive oil and toss to coat. Season evenly with salt, black pepper, paprika, garlic powder, and onion powder.
Step 3. Arrange for Baking
  1. Preheat oven to 425°F (220°C). Line a baking sheet with foil or parchment and place a wire rack on top if using. Arrange drumsticks in a single layer with space between them.
Step 4. Bake Until Done
  1. Bake for 40–45 minutes, turning once halfway through, until the skin is golden and the internal temperature reaches 175–185°F.
Step 5. Rest and Serve
  1. Remove from the oven and let rest for 5 minutes before serving.
