Step 1. Preheat Oven
- Preheat oven to 375°F (190°C).
Step 2. Prepare Vegetables
- In a baking dish, combine cherry tomatoes, bell peppers, spinach, olive oil, and seasoning. Toss to coat evenly.
Step 3. Add Feta
- Place the block of feta cheese in the center of the dish.
Step 4. Bake Vegetables and Feta
- Bake for 20–25 minutes until vegetables are softened and feta is slightly golden.
Step 5. Add Eggs
- Remove from oven and create small spaces in the mixture. Crack eggs into the dish.
Step 6. Bake Again
- Return to oven and bake for 8–10 minutes, or until eggs are cooked to your preference.
Step 7. Garnish
- Add fresh herbs or chili flakes if desired.
Step 8. Serve
- Serve warm with bread or on its own.
