Step 1. Preheat the Oven
- Preheat oven to 350°F and line a baking sheet with parchment paper.
Step 2. Mash the Bananas
- Place the bananas in a bowl and mash them with a fork until mostly smooth.

- In a mixing bowl, beat softened butter and sugar until smooth and creamy.
Step 4. Add Wet Ingredients
- Mix in the mashed bananas, egg, and vanilla extract until fully combined.
Step 5. Combine Dry Ingredients
- In a separate bowl, whisk together flour, baking soda, and salt.
Step 6. Mix the Dough
- Gradually add the dry ingredients to the banana mixture and stir until just combined.

- Fold in chocolate chips or chopped walnuts if using.
Step 8. Portion the Cookies
- Drop spoonfuls of dough onto the prepared baking sheet, leaving space between each cookie.
