Ingredients
  

  • 3 ripe bananas mashed
  • cups all-purpose flour
  • ¾ cup granulated sugar
  • ½ cup unsalted butter melted
  • 2 large eggs
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
Optional: ½ cup chocolate chips or chopped walnuts

Method
 

Step 1. Preheat the Oven
  1. Preheat oven to 350°F and line a muffin tin with paper liners or lightly grease the cups.
Step 2. Mash the Bananas
  1. Place bananas in a bowl and mash with a fork until mostly smooth.
Step 3. Mix Wet Ingredients
  1. Add melted butter, sugar, eggs, and vanilla extract to the mashed bananas. Stir until well combined.
Step 4. Combine Dry Ingredients
  1. In another bowl, whisk together flour, baking soda, and salt.
Step 5. Mix the Batter
  1. Gradually add the dry ingredients to the banana mixture and stir gently until just combined.
Step 6. Add Optional Mix-Ins
  1. Fold in chocolate chips or chopped walnuts if using.
Step 7. Fill the Muffin Tin
  1. Divide the batter evenly among the muffin cups, filling each about three-quarters full.
Step 8. Bake the Muffins
  1. Bake for 18–22 minutes, until a toothpick inserted in the center comes out clean.
Step 9. Cool and Serve
  1. Let the muffins cool in the pan for about 5 minutes, then transfer them to a cooling rack.
