Ingredients
  

  • 1 lb 450g ground beef
  • 1 small onion diced
  • 2 cloves garlic minced
  • 2 cups enchilada sauce
  • 6 –8 corn tortillas cut or torn
  • 1 1/2 cups shredded cheese cheddar or Mexican blend
  • 1/2 cup black beans optional
  • 1/2 cup corn optional
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and black pepper to taste

  • Baking dish (9x9 or similar)
  • Knife and cutting board
  • Measuring cups and spoons

Method
 

Step 1. Preheat Oven
  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
Step 2. Cook Beef
  1. In a skillet over medium heat, cook ground beef with diced onion until browned. Add garlic and cook briefly.
Step 3. Season
  1. Stir in cumin, chili powder, salt, and pepper. Add beans or corn if using.
Step 4. Add Sauce
  1. Mix in a portion of the enchilada sauce to coat the beef evenly.
Step 5. Layer Casserole
  1. In the baking dish, spread a thin layer of sauce. Add tortillas, beef mixture, and cheese. Repeat layers, finishing with cheese on top.
Step 6. Bake
  1. Bake uncovered for 20–25 minutes until cheese is melted and bubbly.
Step 7. Rest & Serve
  1. Let rest for 5–10 minutes before slicing and serving.
