- Brown Sausages: Heat olive oil in a skillet over medium-high heat. Brown bratwurst sausages for 2–3 minutes per side until golden. Transfer to crockpot.
- Sauté Veggies: In the same skillet, cook onions and bell peppers for 4–5 minutes until softened. Add garlic and cook 1 minute. Transfer to crockpot.
- Assemble: Add beer, beef broth, Dijon mustard, Worcestershire sauce, caraway seeds (if using), smoked paprika, salt, and pepper to the crockpot. Stir gently to combine.
- Cook: Cover and cook on low for 6–7 hours or high for 3–4 hours, until sausages are tender and flavors meld.
- Serve: Remove sausages and veggies with tongs. Spoon broth over or serve on the side as a dipping sauce. Garnish with parsley.

Sausage Type: Use fresh bratwurst for best results; pre-cooked works but reduce cook time by 1 hour.
