- Combine Ingredients: In the crockpot, add chicken breasts, white beans, corn, celery, onion, garlic, buffalo sauce, ranch seasoning, chicken broth, salt, and pepper. Stir well.
- Cook: Cover and cook on low for 6–8 hours or high for 3–4 hours, until chicken is tender.
- Shred Chicken: Remove chicken to a plate and shred with two forks. Return to crockpot.
- Add Creaminess (Optional): Stir in cubed cream cheese until melted (about 10–15 minutes on low).
- Serve: Ladle into bowls and top with blue cheese, ranch drizzle, green onions, or celery leaves.
Notes
Ranch Seasoning (Homemade): Mix 1 tbsp dried parsley, 1 tsp dill, 1 tsp garlic powder, 1 tsp onion powder, 1/2 tsp dried basil, 1/4 tsp pepper.
Gluten-Free: Use gluten-free buffalo sauce, ranch mix, and broth.
Heat Level: Start with 3/4 cup buffalo sauce; add more after cooking.
Make-Ahead: Assemble in crockpot insert the night before; refrigerate and cook in the morning.
