Step 1. Preheat Oven
- Preheat oven to 375°F (190°C) and lightly grease a baking dish.
Step 2. Cook Beef
- In a skillet over medium heat, cook ground beef and onion until browned. Drain excess fat.
Step 3. Prepare Filling
- Add taco seasoning, beans, corn, and half of the enchilada sauce. Stir until well combined.
Step 4. Layer Casserole
- Place tortillas in the bottom of the baking dish. Add a layer of beef mixture, then sprinkle cheese on top.
Step 5. Repeat Layers
- Continue layering tortillas, filling, sauce, and cheese until ingredients are used, finishing with cheese on top.
Step 6. Bake
- Bake uncovered for 25–30 minutes until cheese is melted and bubbly.
Step 7. Rest
- Let casserole rest for 10 minutes before slicing.
Step 8. Serve
- Add desired toppings and serve warm.
