  • 1 lb ground beef
  • 1 small onion chopped
  • 1 packet taco seasoning or 2 tablespoons homemade seasoning
  • 1 can 15 oz black beans or pinto beans (drained)
  • 1 cup corn optional
  • 1 can 10 oz enchilada sauce or salsa
  • 6 medium flour tortillas
  • 2 cups shredded cheddar or Mexican blend cheese
Optional Toppings:
  • Sour cream
  • Avocado slices
  • Fresh cilantro
  • Jalapeños
  • Green onions

Method
 

Step 1. Preheat Oven
  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
Step 2. Cook Beef
  1. In a skillet over medium heat, cook ground beef and onion until browned. Drain excess fat.
Step 3. Prepare Filling
  1. Add taco seasoning, beans, corn, and half of the enchilada sauce. Stir until well combined.
Step 4. Layer Casserole
  1. Place tortillas in the bottom of the baking dish. Add a layer of beef mixture, then sprinkle cheese on top.
Step 5. Repeat Layers
  1. Continue layering tortillas, filling, sauce, and cheese until ingredients are used, finishing with cheese on top.
Step 6. Bake
  1. Bake uncovered for 25–30 minutes until cheese is melted and bubbly.
Step 7. Rest
  1. Let casserole rest for 10 minutes before slicing.
Step 8. Serve
  1. Add desired toppings and serve warm.
