Ingredients
  

  • 2 cups carrots grated or julienned
  • 1 large apple julienned or thinly sliced
  • 1 tablespoon lemon juice or apple cider vinegar
  • 1 tablespoon honey or maple syrup
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste
  • Optional: chopped parsley or raisins

Method
 

  1. Grate or julienne the carrots and place them in a large mixing bowl.
  2. Slice or julienne the apple and toss immediately with lemon juice to prevent browning.

  4. Add apples to the carrots.
  5. Pour the dressing over the salad.
  6. Toss gently until evenly coated.
