Step 1. Preheat the Oven
Preheat oven to 425°F and line a baking sheet with parchment paper.
Step 2. Slice the Cauliflower
Remove outer leaves and trim the stem slightly. Slice cauliflower lengthwise into ¾–1-inch-thick steaks. Reserve loose florets for roasting alongside.
Step 3. Season the Steaks
Brush both sides of the cauliflower steaks with olive oil. Season evenly with salt, pepper, and optional spices.
Step 4. Roast Until Tender
Roast for 20–25 minutes, flipping halfway, until cauliflower is tender and lightly golden at the edges.
Step 5. Add the Cheese
Remove from oven and top each steak with cheddar, mozzarella, and Parmesan.
Step 6. Melt and Brown
Return to the oven and bake for 5–8 minutes until cheese is melted and lightly golden.
Step 7. Rest and Serve
Let rest for 2–3 minutes before serving so the cheese sets slightly.
