Ingredients
  

  • lb boneless skinless chicken breasts or thighs
  • 1 cup uncooked long-grain white rice
  • 1 can 10.5 oz cream of chicken soup
  • cups chicken broth
  • 2 tablespoons butter melted
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon salt or to taste
  • ½ teaspoon black pepper
  • Optional: 1 cup shredded cheddar cheese
  • Optional: ½ cup frozen peas or broccoli florets

Method
 

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. In a mixing bowl, combine uncooked rice, cream of chicken soup, chicken broth, melted butter, onion, garlic, salt, and black pepper. Stir until well mixed.
  3. Pour the rice mixture evenly into the prepared baking dish.
  4. Place chicken pieces on top of the rice mixture and season lightly with salt and pepper.
  5. Cover the dish tightly with aluminum foil and bake for 45–50 minutes, until the rice is tender and the chicken is fully cooked.
  6. Remove foil and bake uncovered for an additional 10–15 minutes to allow excess liquid to absorb.
  7. Let rest for 5–10 minutes before serving. Add cheese during the last 10 minutes if using.

  • Use long-grain white rice for best texture
  • Keep foil tightly sealed to ensure rice cooks evenly
  • Add a splash of broth when reheating to maintain moisture
