  • 1 tablespoon olive oil
  • 1 tablespoon fajita seasoning or 1 packet
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 green bell pepper sliced
  • 1 medium onion sliced
  • cups shredded cheese cheddar or Mexican blend
  • Salt and black pepper to taste
Optional Add-ins:
  • ½ cup sour cream or cream cheese
  • ¼ teaspoon chili flakes
  • Fresh cilantro for garnish

Method
 

Step 1. Preheat Oven
  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
Step 2. Prepare Chicken

Step 3. Mix Ingredients
  1. In a large bowl, combine chicken, bell peppers, onion, olive oil, and seasoning. Toss until evenly coated.
Step 4. Assemble
  1. Transfer mixture into the baking dish and spread evenly.
Step 5. Add Cheese
  1. Sprinkle shredded cheese evenly over the top.
Step 6. Bake
  1. Bake for 25–30 minutes, or until chicken is fully cooked and cheese is melted and bubbly.
Step 7. Rest
  1. Let the casserole rest for 5 minutes before serving.
Step 8. Serve
  1. Garnish with cilantro if desired and serve warm.
