Ingredients
  

  • pounds boneless skinless chicken breasts or thighs
  • 2 tablespoons olive oil
  • 1 medium onion sliced
  • 1 bell pepper sliced
  • 1 medium zucchini sliced
  • cups broccoli florets
  • 3 cloves garlic minced
  • 1 teaspoon salt adjust to taste
  • ½ teaspoon black pepper
  • 1 teaspoon paprika or Italian seasoning
  • Optional: fresh lemon juice or chopped fresh herbs

Method
 

  1. Pat the chicken dry and season both sides with salt, black pepper, and paprika or Italian seasoning.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
  3. Add the chicken and cook until golden on both sides and nearly cooked through. Remove from the pan and set aside.
  4. Add the remaining olive oil to the same skillet. Add onion and cook until softened, about 3 minutes.
  5. Add broccoli and cook for 3–4 minutes, then add bell pepper and zucchini.
  6. Stir in garlic and cook for 30 seconds until fragrant.
  7. Return the chicken to the skillet and cook for 3–5 more minutes, until the chicken is fully cooked and vegetables are tender-crisp.
  8. Taste and adjust seasoning. Finish with lemon juice or fresh herbs if desired and serve hot.

Notes

  • Cut vegetables into similar sizes for even cooking.
  • Chicken thighs stay juicier, but breasts work well if not overcooked.
  • This recipe is naturally gluten-free—avoid adding bottled sauces unless labeled gluten-free.
