Step 1. Prepare Crust
- Preheat oven to 325°F (160°C). Mix cookie crumbs with melted butter and press firmly into the bottom of a springform pan. Bake for 8–10 minutes, then cool.
Step 2. Make Filling
- In a bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing gently. Stir in vanilla, sour cream, and melted chocolate until fully combined.
Step 3. Assemble Cheesecake
- Pour filling over the cooled crust and smooth the top evenly.

- Bake for 50–60 minutes until edges are set and center slightly jiggles. Turn off oven and let cheesecake cool inside with the door slightly open.

- Refrigerate for at least 4 hours or overnight until fully set.
Step 6. Prepare Cherry Topping
- In a saucepan, combine cherries, sugar, lemon juice, and cornstarch. Cook over medium heat until thickened. Let cool completely.
Step 7. Add Topping
- Spread cooled cherry topping over chilled cheesecake.
Step 8. Serve
- Slice and serve chilled.
