Ingredients
  

  • 6 large eggs
  • 1 cup cottage cheese
  • ½ cup shredded cheddar or mozzarella cheese
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup diced bell pepper optional
  • 2 tablespoons chopped green onions optional

Method
 

  1. Step 1. Preheat the Oven
  2. Preheat oven to 350°F and lightly grease a muffin tin.
  3. Step 2. Blend the Base
  4. Add eggs and cottage cheese to a blender or food processor and blend until smooth.
  5. Step 3. Add Seasonings and Cheese
  6. Pour the mixture into a bowl and stir in shredded cheese, salt, and black pepper.
  7. Step 4. Add Mix-Ins
  8. Fold in diced bell pepper and green onions if using.
  9. Step 5. Fill the Muffin Tin
  10. Pour the mixture evenly into the muffin cups, filling each about three-quarters full.
  11. Step 6. Bake the Egg Bites
  12. Bake for 18–22 minutes until the centers are set.
  13. Step 7. Cool and Serve
  14. Allow egg bites to cool slightly before removing from the pan. Serve warm.
