Step 1. Prepare Ingredients
- Slice bell peppers and onion into thin strips for even cooking.
Step 2. Layer in Crockpot
- Place chicken at the bottom of the crockpot and add sliced peppers and onions on top.

- Sprinkle fajita seasoning evenly, then add garlic, diced tomatoes or salsa, and olive oil.

- Gently toss to distribute seasoning without breaking the chicken.
Step 5. Cook
- Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken is tender.
Step 6. Shred or Slice Chicken
- Remove chicken, shred or slice it, then return it to the crockpot and mix with juices.
Step 7. Add Lime Juice
- Stir in fresh lime juice before serving for a bright flavor.
Step 8. Serve
- Serve warm in tortillas or over rice with your favorite toppings.
