Ingredients
  

  • 1.5 lbs 700g chicken breasts or thighs
  • 3 bell peppers sliced
  • 1 large onion sliced
  • 2 tbsp fajita seasoning
  • 1/2 cup diced tomatoes or salsa
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tbsp fresh lime juice
  • Salt and black pepper to taste

Method
 

Step 1. Prepare Ingredients
  1. Slice bell peppers and onion into thin strips for even cooking.
Step 2. Layer in Crockpot
  1. Place chicken at the bottom of the crockpot and add sliced peppers and onions on top.
Step 3. Add Seasoning
  1. Sprinkle fajita seasoning evenly, then add garlic, diced tomatoes or salsa, and olive oil.
Step 4. Mix Lightly
  1. Gently toss to distribute seasoning without breaking the chicken.
Step 5. Cook
  1. Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken is tender.
Step 6. Shred or Slice Chicken
  1. Remove chicken, shred or slice it, then return it to the crockpot and mix with juices.
Step 7. Add Lime Juice
  1. Stir in fresh lime juice before serving for a bright flavor.
Step 8. Serve
  1. Serve warm in tortillas or over rice with your favorite toppings.
