Step 1. Prepare the Crockpot
- Layer the sliced onions evenly in the bottom of the slow cooker.
Step 2. Season the Beef
- Pat the chuck roast dry. Season all sides with salt, black pepper, garlic powder, and Italian seasoning.
Step 3. Add the Beef
- Place the seasoned roast directly on top of the onions.
Step 4. Add Liquid and Peppers
- Pour beef broth around the roast. Add pepperoncini peppers, pepperoncini juice, garlic, and Worcestershire sauce if using.
Step 5. Slow Cook
- Cover and cook on LOW for 8–9 hours or HIGH for 4–5 hours, until the beef is fork-tender.
Step 6. Shred the Beef
- Remove the roast and shred using two forks. Return the shredded beef to the crockpot and stir to coat in the juices.
Step 7. Rest and Serve
- Let the beef sit in the juices for 10–15 minutes before serving.
