Crockpot Italian Chicken

Ingredients
  

  • 2 pounds boneless skinless chicken breasts or thighs
  • 1 teaspoon salt adjust to taste
  • ½ teaspoon black pepper
  • teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 1 medium onion sliced
  • 3 cloves garlic minced
  • 1 14.5 oz can diced tomatoes (with juices)
  • ½ cup chicken broth
  • Optional: red pepper flakes fresh basil or parsley

Equipment

  • Slow cooker (5–6 quart)
  • Cutting board

Method
 

Step 1. Prepare the Crockpot
  1. Lightly coat the bottom of the slow cooker with olive oil. Spread sliced onion evenly across the bottom.
Step 2. Season the Chicken
  1. Pat the chicken dry. Season both sides with salt, black pepper, Italian seasoning, and garlic powder.
Step 3. Add the Chicken
  1. Place the seasoned chicken on top of the onions.
Step 4. Add Tomatoes and Broth
  1. Pour diced tomatoes and chicken broth around the chicken. Add minced garlic and red pepper flakes if using.
Step 5. Slow Cook
  1. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until chicken is tender and fully cooked.
Step 6. Shred or Slice
  1. Remove chicken and shred with two forks or slice. Return to the crockpot and stir to coat in the juices.
Step 7. Rest and Serve
  1. Let the chicken sit in the sauce for 10 minutes. Taste and adjust seasoning. Garnish with fresh herbs if desired.

Notes

  • Chicken thighs stay juicier than breasts, especially on longer cooks.
  • Store chicken in its sauce to prevent drying when reheating.
  • Add a splash of broth if the sauce thickens too much.
