Step 1. Prepare Beef
- Slice beef into thin strips and toss with cornstarch until evenly coated.
Step 2. Sear Beef (Optional)
- Heat oil in a skillet over medium-high heat and lightly brown the beef for extra flavor.
Step 3. Add to Crockpot
- Transfer beef to the slow cooker.
Step 4. Prepare Sauce
- In a bowl, mix soy sauce, beef broth, garlic, brown sugar, and ginger.
Step 5. Cook
- Pour sauce over the beef. Cover and cook on low for 6–7 hours or high for 3–4 hours.
Step 6. Add Vegetables
- Add sliced bell peppers and onion about 1 hour before cooking is done.
Step 7. Thicken Sauce (Optional)
- If needed, mix 1 tablespoon cornstarch with water and stir into the slow cooker during the last 20 minutes.
Step 8. Serve
- Serve hot over rice or noodles.
