Ingredients
  

  • pounds boneless chicken breast or thighs
  • ½ cup peanut butter
  • ¼ cup soy sauce
  • 2 cloves garlic minced
  • 1 tablespoon fresh ginger minced
  • 1 tablespoon honey or brown sugar
  • 1 tablespoon lime juice
  • ½ cup chicken broth
  • ½ teaspoon red pepper flakes optional
  • 2 tablespoons chopped peanuts optional, for garnish
  • 2 tablespoons chopped cilantro optional, for garnish

Method
 

Step 1. Prepare the Sauce
  1. In a mixing bowl, whisk together peanut butter, soy sauce, garlic, ginger, honey, lime juice, and chicken broth until smooth.
Step 2. Add Chicken to Crockpot
  1. Place the chicken in the crockpot in a single layer.
Step 3. Add the Sauce
  1. Pour the prepared peanut sauce over the chicken, making sure it is evenly coated.
Step 4. Cook the Chicken
  1. Cover and cook on low for 5–6 hours or on high for 2–3 hours until the chicken is tender.
Step 5. Shred the Chicken
  1. Remove the chicken, shred it with two forks, and return it to the crockpot.
Step 6. Mix and Adjust Flavor
  1. Stir the shredded chicken into the sauce and adjust seasoning if needed.
Step 7. Serve
  1. Serve warm, garnished with chopped peanuts and cilantro if desired.
