Ingredients
  

  • 2 large cucumbers sliced
  • 2 cups ripe tomatoes chopped
  • ΒΌ small red onion thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar or lemon juice
  • Salt to taste
  • Black pepper to taste
  • Optional: fresh parsley or dill chopped

Method
