  • 1 cup shredded cheddar cheese
  • 1 red bell pepper diced
  • 1/2 red onion or 4 green onions finely chopped
  • 1 cup mayonnaise
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 cups Fritos corn chips classic or chili cheese
Optional Add-Ins
  • 1 jalapeño minced
  • 1/2 cup black beans rinsed
  • 1/2 cup green onions
  • Fresh cilantro chopped
  • 1 teaspoon smoked paprika
  • 1 tablespoon lime juice

Method
 

  1. Prepare the Vegetables:
  2. Dice the bell pepper and onion, and mince jalapeño if using. Fresh vegetables add texture, color, and a crisp bite to the salad.
  3. Make the Dressing:
  4. In a large bowl, whisk mayonnaise, chili powder, garlic powder, salt, pepper, and optional lime juice until creamy and smooth.
  5. Add Corn, Cheese, and Veggies:
  6. Stir in the drained corn, shredded cheddar, diced bell pepper, onion, and any optional add-ins like black beans or cilantro. Mix until fully coated.
  7. Add Fritos Just Before Serving:
  8. Fold in the Fritos right before serving so they stay crunchy. If added early, they will soften in the dressing.
  9. Serve Immediately:
  10. Serve chilled or at room temperature as a side dish, potluck salad, or game-day snack.

Notes

Add Fritos only when ready to serve for maximum crunch.
Chili cheese Fritos give a bolder, smoky flavor.
