German Apple Pancakes

An oven-baked pancake with caramelized apples and a custardy center. Puffy, golden, and lightly sweet, it’s made in one skillet and sliced to serve.

Ingredients
  

  • 2 medium apples Granny Smith or Honeycrisp, peeled and thinly sliced
  • 3 tablespoons unsalted butter
  • 4 large eggs
  • ¾ cup whole milk
  • ¾ cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • Powdered sugar for serving (optional)

Method
 

Step 1. Preheat the Oven
  1. Preheat oven to 425°F and place a 10-inch oven-safe skillet inside to heat.
Step 2. Mix the Batter
  1. In a bowl, whisk together eggs, milk, flour, granulated sugar, and salt until smooth. Set aside.
Step 3. Prepare the Apples
  1. Toss sliced apples with brown sugar and cinnamon until evenly coated.
Step 4. Cook the Apples
  1. Carefully remove the hot skillet from the oven. Add butter and let it melt. Add apples and cook on the stovetop for 3–4 minutes until slightly softened.
Step 5. Add the Batter
  1. Pour the batter evenly over the apples without stirring.
Step 6. Bake
  1. Return the skillet to the oven and bake for 18–22 minutes until puffed, golden, and set.
Step 7. Cool and Serve
  1. Allow to cool slightly before slicing. Dust with powdered sugar if desired.

Notes

  • Use firm apples to maintain texture during baking.
  • The pancake will deflate slightly as it cools; this is normal.
  • Do not open the oven early to prevent collapse.
  • Best served warm for ideal texture.
