Ingredients

Main Ingredients
  • 1 lb ground beef or sliced beef, chicken, or sausage
  • 3 –4 medium potatoes thinly sliced
  • 2 carrots sliced
  • 1 medium onion sliced
  • 2 tablespoons butter or olive oil
  • Salt and black pepper to taste
Optional Seasonings & Add-Ins
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 tablespoon Worcestershire sauce
  • 1 cup mushrooms sliced
  • 1/2 cup bell peppers sliced
  • Shredded cheddar or mozzarella cheese
  • Fresh parsley or thyme

Equipment

  • Heavy-duty aluminum foil
  • Knife & cutting board
  • Baking sheet (for oven method)
  • Grill or oven

Method

  1. Prepare the Ingredients:
  2. Slice potatoes, carrots, and onions evenly so they cook at the same rate. Divide the meat into equal portions if making individual packets.
  3. Assemble the Foil Packets:
  4. Lay out large sheets of foil. Layer potatoes first, then carrots and onions. Place meat on top and season generously with salt, pepper, and optional spices. Add butter or oil for moisture.
  5. Seal the Packets:
  6. Fold foil tightly around the ingredients, sealing edges well while leaving a little space inside for steam to circulate.
  7. Cook the Hobo Dinner:
  8. Oven: Bake at 375°F (190°C) for 45–60 minutes
  9. Grill: Cook over medium heat for 40–50 minutes, turning once
  10. Campfire: Place on hot coals and cook until vegetables are tender and meat is cooked through
  11. Add Cheese (Optional):
  12. Open packets during the last 5 minutes, sprinkle cheese on top, and reseal loosely to melt.
  13. Rest & Serve:
  14. Let packets rest for a few minutes before opening. Serve directly from foil or plate carefully.

Notes

  • Slice potatoes thinly to avoid undercooking.
  • Use heavy-duty foil to prevent leaks.
  • Chicken and sausage cook slightly faster than beef.
  • Add cheese only at the end to prevent burning.
  • Great for meal prep and outdoor cooking.
  • Customize easily with seasonal vegetables.
