  • 2 medium zucchinis cut into fry-shaped sticks
  • 2 large eggs
  • ½ cup almond flour
  • ½ cup grated Parmesan cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
Optional Add-ins:
  • ¼ teaspoon Italian seasoning
  • 1 tablespoon olive oil for extra crispiness

  • Ranch dressing
  • Garlic aioli

Method
 

Step 1. Preheat Oven or Air Fryer
  1. Preheat oven to 425°F (220°C) or air fryer to 400°F (200°C). Line a baking sheet with parchment paper if baking.
Step 2. Prepare Zucchini
  1. Cut zucchinis into evenly sized sticks. Pat dry thoroughly with paper towels to remove excess moisture.
Step 3. Prepare Coating
  1. In one bowl, whisk eggs. In another bowl, mix almond flour, Parmesan cheese, garlic powder, paprika, salt, and pepper.
Step 4. Coat Zucchini
  1. Dip each zucchini stick into the egg mixture, then coat evenly in the almond flour mixture.
Step 5. Arrange for Cooking
  1. Place coated zucchini in a single layer on the baking sheet or in the air fryer basket. Do not overcrowd.
Step 6. Cook
  1. Bake for 20–25 minutes or air fry for 12–15 minutes, flipping halfway through, until golden and crispy.
Step 7. Serve
  1. Remove from heat and serve immediately with your favorite dipping sauce.
