Step 1. Preheat Oven or Air Fryer
- Preheat oven to 425°F (220°C) or air fryer to 400°F (200°C). Line a baking sheet with parchment paper if baking.
Step 2. Prepare Zucchini
- Cut zucchinis into evenly sized sticks. Pat dry thoroughly with paper towels to remove excess moisture.
Step 3. Prepare Coating
- In one bowl, whisk eggs. In another bowl, mix almond flour, Parmesan cheese, garlic powder, paprika, salt, and pepper.
Step 4. Coat Zucchini
- Dip each zucchini stick into the egg mixture, then coat evenly in the almond flour mixture.
Step 5. Arrange for Cooking
- Place coated zucchini in a single layer on the baking sheet or in the air fryer basket. Do not overcrowd.
Step 6. Cook
- Bake for 20–25 minutes or air fry for 12–15 minutes, flipping halfway through, until golden and crispy.
Step 7. Serve
- Remove from heat and serve immediately with your favorite dipping sauce.
Notes
- Always dry zucchini thoroughly to avoid soggy fries.
- Do not overcrowd the pan; spacing helps achieve crispiness.
- For extra crunch, lightly drizzle olive oil before cooking.
- Air frying gives a crispier result compared to baking.
- Best served fresh, as they soften over time.
