  • 4 boneless skinless chicken breasts
  • 3 tablespoons olive oil
  • 4 cloves garlic minced
  • Zest of 1 large lemon
  • Juice of 1 large lemon
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried oregano or Italian seasoning
  • Optional: chopped fresh parsley for garnish

Method
 

  1. Preheat the oven to 400°F (200°C) and lightly grease a baking dish.
  2. In a small bowl, mix olive oil, garlic, lemon zest, lemon juice, salt, pepper, and dried herbs until combined.
  3. Place the chicken breasts in the baking dish and pour the lemon garlic mixture over them, turning to coat evenly.
  4. Bake uncovered for 22–28 minutes, or until the chicken reaches an internal temperature of 165°F.
  5. Remove from the oven and let the chicken rest for 5 minutes before serving.
  6. Garnish with fresh parsley if desired and serve warm.
