Meatball Stroganoff

Ingredients
  

For the Meatballs:
  • 1 lb ground beef
  • ½ cup breadcrumbs
  • 1 large egg
  • 2 cloves garlic minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
For the Stroganoff Sauce:
  • 1 tablespoon butter
  • 1 small onion sliced
  • 8 oz mushrooms sliced
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1 teaspoon Worcestershire sauce
  • ½ cup sour cream
  • Fresh parsley for garnish
For Serving:
  • Egg noodles rice, or mashed potatoes

  • Large skillet or sauté pan
  • Mixing bowl

Method
 

Step 1. Prepare Meatballs
  1. In a bowl, mix ground beef, breadcrumbs, egg, garlic, salt, and pepper until combined. Shape into meatballs.
Step 2. Brown Meatballs
  1. Heat a skillet over medium heat and cook meatballs until browned on all sides. Remove and set aside.
Step 3. Cook Vegetables
  1. In the same skillet, melt butter and sauté onions and mushrooms until softened.
Step 4. Make Sauce Base
  1. Sprinkle flour over the vegetables and stir for 1 minute.
Step 5. Add Broth
  1. Gradually pour in beef broth while stirring continuously. Add Worcestershire sauce.
Step 6. Simmer Meatballs
  1. Return meatballs to the skillet and simmer for 10–15 minutes until cooked through and sauce thickens slightly.
Step 7. Add Sour Cream
  1. Reduce heat and stir in sour cream until smooth. Do not boil after adding sour cream.
Step 8. Serve
  1. Serve warm over noodles, rice, or mashed potatoes and garnish with parsley.

  • Do not overmix meatball mixture to keep meatballs tender.
  • Brown meatballs well for extra flavor.
  • Add sour cream over low heat to prevent curdling.
  • Use cremini mushrooms for deeper flavor if desired.
  • Adjust sauce thickness with extra broth if needed.
