Ingredients

For the Casserole Base:
  • 3 cups cooked shredded chicken (rotisserie works best)
  • 4 oz cream cheese softened
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and black pepper to taste
For the Topping:
  • 1 cup crushed Ritz crackers or similar buttery crackers
  • 3 tbsp melted butter

Equipment

  • Large mixing bowl
  • 9×13-inch baking dish
  • Spoon or spatula
  • Measuring cups and spoons
  • Oven

Method

Step 1. Preheat the Oven
  1. Preheat your oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish to prevent sticking.
Step 2. Prepare the Creamy Base
  1. In a large bowl, combine softened cream cheese, sour cream, and mayonnaise. Mix until smooth and lump-free. This creates the rich, creamy foundation of the casserole.
Step 3. Add Chicken and Flavorings
  1. Add shredded chicken, cheddar cheese, mozzarella cheese, garlic powder, onion powder, salt, and pepper into the mixture. Stir until everything is evenly coated.
Step 4. Assemble the Casserole
  1. Transfer the mixture into the prepared baking dish. Spread it evenly using a spatula so it cooks uniformly.
Step 5. Prepare the Topping
  1. In a separate bowl, mix crushed crackers with melted butter until evenly coated. Sprinkle this mixture over the top of the casserole.
Step 6. Bake to Perfection
  1. Place the dish in the oven and bake for 30–35 minutes, or until the top is golden brown and the casserole is bubbly around the edges.
Step 7. Rest and Serve
  1. Remove from oven and let it rest for 5–10 minutes before serving. This helps the casserole set and improves texture.

Notes

  • Rotisserie chicken saves time and adds extra flavor
  • Soften cream cheese beforehand for easier mixing
  • Don’t skip the resting time—it helps the casserole hold its shape
  • Add a splash of milk if the mixture feels too thick
  • For extra crunch, double the topping
