Ingredients
  

  • 1 lb 450g gnocchi
  • 2 salmon fillets cut into chunks
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 cup fresh spinach optional
  • Salt and black pepper to taste

Method
 

Step 1. Cook the Gnocchi
  1. Bring salted water to a boil and cook gnocchi until they float (about 2–3 minutes). Drain and set aside.
Step 2. Cook the Salmon
  1. Heat olive oil in a pan over medium heat. Cook salmon pieces for 2–3 minutes per side until just cooked. Remove and set aside.
Step 3. Prepare the Sauce Base
  1. In the same pan, melt butter and sauté garlic for about 30–60 seconds until fragrant.
Step 4. Make the Cream Sauce
  1. Add heavy cream and let it simmer gently. Stir in Parmesan cheese, lemon juice, and zest until smooth and slightly thickened.
Step 5. Add Spinach
  1. Add spinach and cook until wilted.
Step 6. Combine Everything
  1. Return gnocchi and salmon to the pan. Gently toss until everything is evenly coated in the sauce.
Step 7. Adjust Seasoning
  1. Taste and adjust salt, pepper, and lemon if needed.
Step 8. Serve
  1. Serve immediately with extra Parmesan and black pepper on top.
