Step 1. Cook the Gnocchi
- Bring salted water to a boil and cook gnocchi until they float (about 2–3 minutes). Drain and set aside.
Step 2. Cook the Salmon
- Heat olive oil in a pan over medium heat. Cook salmon pieces for 2–3 minutes per side until just cooked. Remove and set aside.
Step 3. Prepare the Sauce Base
- In the same pan, melt butter and sauté garlic for about 30–60 seconds until fragrant.
Step 4. Make the Cream Sauce
- Add heavy cream and let it simmer gently. Stir in Parmesan cheese, lemon juice, and zest until smooth and slightly thickened.
Step 5. Add Spinach
- Add spinach and cook until wilted.
Step 6. Combine Everything
- Return gnocchi and salmon to the pan. Gently toss until everything is evenly coated in the sauce.
Step 7. Adjust Seasoning
- Taste and adjust salt, pepper, and lemon if needed.
Step 8. Serve
- Serve immediately with extra Parmesan and black pepper on top.
