Step 1. Preheat the Oven
- Preheat oven to 375°F and place the pie crust in a 9-inch pie dish.
Step 2. Blind Bake the Crust
- Line the crust with parchment and add pie weights or dried beans. Bake for 10 minutes, remove weights, and bake another 5 minutes until lightly set.
Step 3. Prepare the Custard
- In a bowl, whisk eggs, cream, salt, and black pepper until smooth.
Step 4. Add the Filling
- Scatter salmon, diced onion or shallot, and shredded cheese evenly into the crust.
Step 5. Pour the Custard
- Pour the egg mixture over the filling ingredients.
Step 6. Bake the Quiche
- Bake for 35–40 minutes until the center is set and the top is lightly golden.
Step 7. Rest Before Serving
- Allow the quiche to cool for at least 10 minutes before slicing.
