Ingredients
  

  • 1 pound medium or large shrimp peeled and deveined
  • 1 cup orzo pasta
  • 2 tablespoons olive oil
  • ½ small onion finely diced
  • 2 cloves garlic minced
  • 2 cups chicken broth
  • 2 tablespoons lemon juice
  • ½ cup grated Parmesan cheese
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons fresh parsley chopped

Method
 

Step 1. Cook the Shrimp
  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add shrimp and cook 1–2 minutes per side until pink and opaque. Remove and set aside.
Step 2. Sauté the Aromatics
  1. Add remaining olive oil to the skillet. Cook diced onion until softened, then stir in minced garlic and cook for about 30 seconds.
Step 3. Toast the Orzo
  1. Add orzo to the skillet and stir for 1–2 minutes until lightly toasted.
Step 4. Cook the Orzo
  1. Pour in chicken broth and bring to a simmer. Cook for 8–10 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.
Step 5. Add Lemon and Cheese
  1. Stir in lemon juice and grated Parmesan cheese until combined.
Step 6. Return the Shrimp
  1. Add the cooked shrimp back to the skillet and toss gently to combine.
Step 7. Serve
  1. Season with salt and black pepper, garnish with chopped parsley, and serve warm.
