Step 1. Cook the Shrimp
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add shrimp and cook 1–2 minutes per side until pink and opaque. Remove and set aside.
Step 2. Sauté the Aromatics
- Add remaining olive oil to the skillet. Cook diced onion until softened, then stir in minced garlic and cook for about 30 seconds.
Step 3. Toast the Orzo
- Add orzo to the skillet and stir for 1–2 minutes until lightly toasted.
Step 4. Cook the Orzo
- Pour in chicken broth and bring to a simmer. Cook for 8–10 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.
Step 5. Add Lemon and Cheese
- Stir in lemon juice and grated Parmesan cheese until combined.
Step 6. Return the Shrimp
- Add the cooked shrimp back to the skillet and toss gently to combine.
Step 7. Serve
- Season with salt and black pepper, garnish with chopped parsley, and serve warm.
