Step 1. Cook Beef
- In a skillet over medium heat, cook ground beef and onion until browned. Drain excess fat.

- Add taco seasoning and diced tomatoes. Stir and cook for 2–3 minutes.

- Lightly grease the slow cooker.
Step 4. Layer Ingredients
- Add a layer of tortilla pieces, followed by beef mixture, beans, corn, and cheese.
Step 5. Repeat Layers
- Continue layering until all ingredients are used, finishing with cheese on top.
Step 6. Cook
- Cover and cook on low for 3–4 hours until heated through and cheese is melted.
Step 7. Rest
- Let casserole sit for 10 minutes before serving.
Step 8. Serve
- Top with sour cream, cilantro, jalapeños, or avocado if desired.
