Slow Cooker Taco Casserole

A hearty and cheesy Tex-Mex casserole made with seasoned ground beef, beans, tortillas, and melted cheese, all slow-cooked to perfection. It’s warm, flavorful, and perfect for easy family dinners or meal prep.

Ingredients
  

Main Ingredients:
  • 1 lb ground beef
  • 1 small onion chopped
  • 1 packet taco seasoning or 2 tablespoons homemade seasoning
  • 1 can 15 oz black beans or pinto beans (drained)
  • 1 can 10 oz diced tomatoes with green chilies
  • 1 cup corn optional
  • 6 small tortillas cut into pieces
  • 2 cups shredded cheddar or Mexican blend cheese
Optional Toppings:
  • Sour cream
  • Fresh cilantro
  • Jalapeños
  • Avocado slices

Method
 

Step 1. Cook Beef
  1. In a skillet over medium heat, cook ground beef and onion until browned. Drain excess fat.
Step 2. Season Meat
  1. Add taco seasoning and diced tomatoes. Stir and cook for 2–3 minutes.
Step 3. Prepare Slow Cooker
  1. Lightly grease the slow cooker.
Step 4. Layer Ingredients
  1. Add a layer of tortilla pieces, followed by beef mixture, beans, corn, and cheese.
Step 5. Repeat Layers
  1. Continue layering until all ingredients are used, finishing with cheese on top.
Step 6. Cook
  1. Cover and cook on low for 3–4 hours until heated through and cheese is melted.
Step 7. Rest
  1. Let casserole sit for 10 minutes before serving.
Step 8. Serve
  1. Top with sour cream, cilantro, jalapeños, or avocado if desired.
