Step 1. Prepare the Salsa
- In a mixing bowl, combine diced mango, red onion, cilantro, lime juice, and optional jalapeño. Stir gently and set aside.
Step 2. Season the Salmon
- Pat salmon fillets dry and season both sides with salt and black pepper.
Step 3. Heat the Pan
- Heat olive oil in a skillet over medium-high heat.
Step 4. Cook the Salmon
- Place salmon fillets skin-side down in the skillet and cook for about 4–5 minutes. Flip and cook another 3–4 minutes until the fish flakes easily with a fork.
Step 5. Plate the Salmon
- Transfer the cooked salmon to serving plates.
Step 6. Add the Mango Salsa
- Spoon the prepared mango salsa over the salmon fillets.
Step 7. Serve
- Serve immediately with extra lime wedges if desired.
